  • Hare Krishna Jyoti ji,
There are several points in your post.
    1) She is a neophyte 2) She is serious in bhakti 3) Her parents are scared about her future 4) Her family members are non-vegetarians and she is a vegetarian.
Now since is serious in her bhakti, Krishna will make the way. If she is willing to marry (actually Srila Prabhupada recommended compulsory marriage for all women devotees) then she should tell her parents that there is nothing to be scared about her future. But she can boldly tell this that she wants a vegetarian husband. Actually i feel its very easy since most parents want that their son-in-law should be a non-smoker and non-drinker so just an additional clause of 'Vegetarian' :) is required.

She should tell her parents about Karmic affects of eating non-veg but should not go in great details as they may not understand this and may even try to put obstacles in her path of devotion. She can simply avoid non-veg food. I believe she can cook herself and offer to Krishna as per capacity and eat prasadam.

Best solution is to get married with a like minded person if she is of marriagable age..

    May Krishna bless her.
    Hari bol
