Millets also comes under grains but one perticular pseudograin could be used as a substitute for grains during vrats, that is Amaranth in hindi they call it as Samo chawal, Rajgira.
Quinoa is also a pseudograin. It also can be used in vrats and upavas esp. ekadashi.
Rest all others jowars , bajra wheat ARE NOT to be used.

What is called Samak/ Samai Rice/ Little Millet/ Moriya - this can be used on ekadasi.

Which millet? Millet is not an item, it is a category of many items. Not all millets can be consumed on ekadashi as per vaishnav principles.
