why in all the books, Lord "Chaitanya" is spelt as "Caitanya" ? Like this, "Chanakya" is spelt as "Canakya"? Why "h" is understood? why it is so?

You must have noticed a dot (.) beneath 'C'. This 'dot' beneath 'C' implies 'Ch' not 'C'. So, this is a phonetic symbol. Prabhupad wrote his books keeping in mind foreigners, for whom Indian words are tongue-twisters. Phonetics help them greatly in pronouncing Indian words.
