How eager to see such like a Devotee as You are, who is very interested in science and determinate to understand everything and perform correctly!
In Ayurveda it says that our body is the tiny copy of the whole universe. So it is complete. It also says that even body is so strong and intelligent that can create all needed vitamins itself. I know people who drink only milk and live healthy life. again in Ayurveda it says that this physical body per day needs only one tea spoon of honey. THAT IS ENOUGH FOR THE MAINTENANCE of this body.
Also know people who eat only rice and life physically, mentally, spiritually healthy life.
The sickness in the physical body appears first in the subtle form, in the subtle body.
For example, if one gets angry to someone, there is chance to get tonsillitis. When one is always hate someone, one has chance to capture that hate as a stomach ulcer. If one lives pessimistic life one has chance to have an anemia...in this way Ayurveda sees to the root of the sickness and gives advise to destroy that root.
In this way our mind plays very big role in our bodily health.
How to cure the mind? From food we first get the emotional things. For example if You are given only lots of types of vitamins in Your lunch plate will You be satisfied? Eating only those red, yellow, blue, round balls? No. From food we get love.
As like just born child takes his/her first love in the form of milk. By the milk of his mother he gets the feeling of protection.
Just we should learn how to cook. There are so many vegetarian book that i use which were written by Devotees.
The food should consist of 6 smells:
Sweet, sour, salty, bitter, astringent, pungent;
In those books all the recipes are perfectly done having these smells.
Vitamin 12 - mostly we eat diary products. But again if we live correct life: regime of waking up early morning, going to bed not late, eating in the right time we do not need any other vitamins outside from vegetarian food offered to Krishna.
Also some ayurvedic doctors recommend Charvanprash. If You really need some vitamins.
my mother is a doctor, and when i joined KC and became vegetarian she started to worry and fully checked my organism in the diagnostic center, but everything was all right even better. she also became vegetarian. ;-)

A vegetarian diet can provide adequate protein, iron, zinc, vitamin B12, and calcium intake, though these nutrients can be relatively low in poorly planned vegetarian diets, particularly when not enough calories are consumed.
vegetarians can get more dietary vit b12 either from foods fortified with B12, such as some fortified ready-to-eat cereals, fortified soy milk etc..
Vegetarian Sources Of Vitamin B12:
Milk 8oz: 0.9mcg
Yogurt, 8oz:0.9mcg
Cheese, 1oz: 0.2mcg
The RDAs (Recommended daily allowance) For Vitamin B12
Adults over 19:
2.4mcg
Pregnant women:
2.6mcg
Lactating mothers:
2.8mcg
But for us Vit B12 shouldnt be the main concern.. people will get lot of sinful reactions by eating meat. so we should totally avoid it and be pure vegetarians..
I am no expert, except for my own health.. I am vegetarian and am superior in health to most carnivore and even omnivores. Please do not worry about all this lack of vitamins this and that. This is all the hype created by the businesses that want's to create a business stream for their none essential products. Enjoy the Krishna Prasadama, it has more benefits then any source of vitamins.
