Maral Alim mataji has covered most of the points. I just wanted to add one of my recent experience in office during lunch. One of the mataji who works with me had brought Mushroom fried rice. I refused to eat it. Then another guy commented that Mushroom tastes like mutton. From my past experience of eating Mushroom, the texture of mushroom is really like that of some sort of meat.

Another reason that I heard from my mom why we dont eat mushrooms is because it grows on dead matter and is a kind of fungus. Hence it falls into the category of food in the mode of ignorance.

Hare Krishna!

Mushrooms are cleaners of the forests. They collect all the dirt, because of that they are considered in the mode of ignorance. Also they breath as like human being not like as other plants who take CO2 and give back O2. And its construction is also similar with animal body.

But sometimes i saw how Devotees ate shampinions. i do not know what is the difference between them. the word shampinion in French is the same mushroom.
