I am forced to offer food cooked by non-devotee most of the time... but it is not mixed with onions, garlic and mushrooms... I would make sure that tulasi leaves touch almost every part of the food... I would then offer it to the Lord... before leaving it for them to eat, I would touch His lotus, transcendental feet, and touch the food, just to double-purify the food... Will the Lord accept it? (I am lacking of time to cook nice food... and there is shortage of items to cook nice food for the Lord to eat)

Who knows whom you are considering as non devotee today maybe has done many pious deeds in last birth to be able to do cooking for lord's prasadam. Or maybe Lord wants to eat food cooked from her hands only. We should never label anyone non devotee. They all coming into KC or preparing food for lord itself showing that they are having some past sukriti in their karma balance. If not Krishna wouldn't allow her to cook itself. He knows very well how to take service from whom at what time. So. don't consider her service low or you are great. You mother is just ignorant that her food is accepted by Lord that is why Lord is allowing her to cook food. Maybe ..Lord wants to remove her bad karma or cut down her prarabdha karma which is not letting her to accept Lord at this very momment.

The requirement that the food shoudl be prepared by a devotee, for the lord, is a standard. That does not mean that food whihc is prepared by non devotee cannot be offered. You are doing the offering, with so much feeling prabhuji. Actually, Krsna is not hungry for the prasadam. He is hungry for our bhaav, our feelings of love with which we offer the food to Him. Rest assured, He is very pleased with your efforts.
PLease try that the non devotee cook (your mother?) eats some of the offered food everyday. Be very nice and loving to her. While offering the food to the lord, please pray very sincerely that the cook should become a devotee and serve the lord.
