Vegan Apple Raisins Almond Muffin
Ingredients
- Cake flour - about 322g (2 ¼ )
- Baking powder - 1.5 tsp
- Salt – ¼ tsp
- Caster raw sugar - 170 gms
- Vegan margarine (use light oil if margarine not available) - ¼ cup
- Water - 320 ml
- Vanilla extract - 2 tsp
- Small apple - 1
- Vinegar / apple cider - 2 tsp
- Raisins - ¼ cup
- Almond Slices - ¼ cup
- Cinnamon powder - 1.5 tsp
Preparation
- Preheat Oven to 480 degrees Fahrenheit / 250 degree Celsius.
- Cut apples into small cubes, and keep aside.
- Beat Margarine and sugar together till fluffy.
- Add Vanilla Essence, Water, and mix well
- Add Flour, Cinnamon Powder, and Baking Powder, mix till all dry ingredients are properly mixed with wet ingredients.
- Add the apple cubes, raisins and almond slices in it.
- Line your muffin tins with muffin paper holders.
- Fold in the vinegar.
- Fill the muffin tins with the batter.
- Bake under 250 dc for 5mins, switch to 180dc (356 F) and bake for another 10-12mins.
- Check the muffins by piercing a toothpick in the center of the muffin.
- Leave muffins to cool.
