Shukto - A Delicious Bengali Recipe (Serves 4) 

Ingredients-
    Vegetables- Raw Banana-2, Raw Papaya-150gms, Sweet Potato-150gms, Radish-150gms,
Parwal-150gms, Okra-150gms, Brinjal-150gms, Bittergourd-100gms.

     Spices (wet masala) - Corriander-10gms, Khuskhus (posto)-50gms, Ginger-20gms,
Mustard seeds-10gms

   Spices(dry masala also known Panch Foran) - Cumin seeds (Jeera), Fenugreek seeds (Methi), Mustard seeds, Bishop's Weed (Ajwain), Fennel seeds (saunf) (total -10gms)

    Oil-100gms (mustard oil or groundnut oil) Ghee-1 tablespoon, Salt-add to taste,
Sugar- 1 tea spoon, Turmeric powder-1 tea spoon.

Method of Preparation:

Wash the vegetables cut them 2 inches size. Keep all the vegetables separately .
Heat the vessel, put oil ,fry the vegetables one after another, fry the bitter gourd pieces in the end. Making dry masala, take all the ingredients and grind them dry and keep aside.
Making the wet masala, take all the ingredients, add some water and grind the ingredients to a fine paste.

Heat the vessel, put some oil, put all fried vegetables together,add wet masala, salt,sugar, turmeric powder and adequate water, cook for 10min. Once the vegetables are cooked add ghee and the dry masala. Cover the vessel with a lid for 5 min.

Shukto is ready to be served with plain rice.
