Ingredients:

- 2 cup semolina (suji)
- 1 cup sour curd (khatta dahi)
- 1tsp channa dal
- 1tsp urad dal
- 1 tsp mustard seeds
- 1tsp cashew nuts cut into pieces
- 10-12 curry leaves
- 1 tsp soda
- 2-3 green chillies cut into small pieces
- small piece of ginger shredded
- 1 tsp salt(as per taste)
- 1tsp sugar
- 1 tbsp oil
- 1 tbsp coconut shredded
- 1 tbsp carrot shredded
- 1tsp coriander leaves
METHOD:
- Mix salt and dahi in suji and make a thick batter using water.
- Cover it and leave for 1 hour.
- Now heat oil in a pan and crackle mustard seeds,urad dal,channa dal,cashew and add curry leaves,green chillies,ginger in it.
- Add this to the idli mixture.
- Add soda and sugar.
- Steam in Idli stand at a high flame for 10 minutes and then remove it from the flame.
- Open it and take out idli mould after 2 minutes.
- Serve hot idlis with coconut chutney and sambhar.
