Paalada / Wheat Chips Kheer

Helo everybody today i wld like to share a very tastey dessrt of Kerala Named Paalada or Wheat chips Kheer.This is a tarditional recipe of Kerala.Palada is a dessert item served in Onam feast.Onam is a festival of Kerala.Its a 10 days festival.We will make diffrnt varieties of Paayasams or Kheer on these 10 days.Paalada is a Sadya [feast] item.Actually i lernt this recipe frm my mother who is an expert in cooking.She is my Guru.I ve no words abt her cooking.She is really a Food Guru.Ok lets think abt the recipe :)


Paalada / Wheat Chips Kheer

Ingredients:-
Milk – 4 cups
Wheat chips– 180gm
Sugar – 700gm
Ghee-3 tbl spn
Cardamom-2 pods
Sago-3 tbl spn

Tempering:-

Cashews-2 tbl spn
Raisins-2 tbl spn
Almonds-2 tbl spn [Slices]

Put Wheat chips in boiling water (2-4 cups) and keep covered for 30 minutes.
Drain completely.Or u cn pressure cook the wheat chips in 4 cups of water .Wait for 2 whistles.Drain the water.
Heat 1 tbl spn of ghee in a pan and fry the wheat chips till the wheat chips turns pink. Keep aside.Add milk and water to a thick bottom pan.
Bring to boil and add wheat chips and reduce the heat to low medium and cook, stir frequently, till milk is reduced by 2/3rd.Add Cardamom seeds and 700 gms of sugar.Stir continuously.On the same time we ve to think abt the sago.Take 3 cups of water on a steel bowl add 3 tbl spn of Sago.It will take lil bit time to cook sago.It has to cook well.If it is done it will look like a transparent pearl.This is the consistency ok.

Stir continuously.Continuous stiring is very important for this recipe.Add the sago into the Paalada mixture.Add 3 tbl spn of ghee.Next step is Tempering.Stir the Paalda.

Take 2 tbl spn of ghee in a sauce pan.Roast cashews,raisins & almond slices.Roastl 3 items till it gets a light golden brown color.Add this roastd mixture into the Paalada / wheat chips kheer.Stir the Paalada and cook for few minutes in low flame.

Paalada is ready to serve. :)
