Mango Fool

Ingredients

  • Cream (500 ml) - 2 cups
  • Pure vanilla extract (15 ml) - 1 tbsp
  • Honey (125 ml) – ½ cup
  • Mango pulp (250 ml) - 1 cup
  • Ripe mangos, peeled, pitted and diced - 2
  • Fresh pineapple, diced (250 ml) - 1 cup

Preparation

  1. With a mixer or a grinder, whip the cream to stiff peaks with vanilla extract and honey.
  2. Fold in mango pulp.
  3. In a medium bowl, toss together diced mango and diced pineapple.
  4. In a parfait glass, layer diced fruit, and mango cream, alternately, two or three times.
  5. Chill it in the refrigerator for 45 minutes before serving.
