Idiyappam

Idiyappam

 

Ingredients

 For Idiyappam:

  • Rice flour - 1 cup
  • Water - approximately 1 1 ½ cups
  • Oil - 2 tsp
  • Salt as required

For Sambar:

  • Cut Mixed Vegetable (bottle guard, carrot, tomato, drumstick, etc) (boiled) - ½ Cup
  • Coconut Milk - 1.5 Cups (unsweetened)
  • Green Chilly - 3
  • Bay Leaf - 1
  • Cinnamon stick - 1
  • Saunf - ½ tsp
  • Garam Masala - 1 tsp (Optional)
  • Oil - ½ tbsp
  • Lemon Juice - 1 tsp
  • Salt - as required

Preparation

For Idiyappam:

  1. Boil water well; add salt and oil to it.
  2. Add the water little by little to the rice flour and make soft dough. Knead it well.
  3. Grease the inside of the idiyappam maker with oil and fill it with the prepared dough and press it in a circular motion on idly plate in the form of long strings.
  4. Steam it for 10-15 minutes.
  5. The basic idiyappam is ready. It can be served as such with stew, sweetened coconut milk, coconut chutney, Kurma or any gravy of your choice.

 For Sambar:

  1. Take oil in a pan. Add bay leaf, cinnamon and saunf Fry for a minute.
  2. Now, add green chilies. Fry well.
  3. Then add boiled vegetables to it.
  4. Simmer the vegetables.
  5. Add garam masala to the vegetables. Sauté for few minutes.
  6. Take ½ Cup of coconut milk. Add 1 Cup of water.
  7. Add this to the vegetables.
  8. Add salt and allow the contents to cook.
  9. After 5 minutes, add another ½ cup of coconut milk with ½ cup of water and add it to the contents in the pan.
  10. Allow it to boil well till the vegetables get completely cooked.
  11. Switch off the gas.
  12. Take out the pan from the stove and then add remaining ½ cup of coconut milk and lemon juice. Mix well.
  13. Serve hot with Idiyappam.
