Green Mango Pie

Pie shell, 1Green Mangoes, 4-1/2 PoundsSugar, 1-1/2 CupsLime Juice, 3 TablespoonsGinger, fresh, 1 InchNutmeg, 1/2 TeaspoonCinnamon, 1/4 Teaspooncornstarch, 1-1/2 TablespoonsApple Juice, 3 TablespoonsButter, unsalted, 3 TablespoonsMake the filling in a large, heavy bottom pan. Peel, pit and cube the mangoes, and cook with the sugar, lime, minced ginger, nutmeg and cinnamon for 20 minutes, or until tender. In a bowl, dissolve the cornstarch in the apple juice. Stir the mixture into the mangos. Bring the filling to a boil, stirring, and return to simmer for another 2 or 3 minutes. Remove the pan from the heat, swirl in the butter, and pour the filling into the pie shell. Offer warm or chilled.
