Midsummer Lemon Poppy Seeds

Ingredients
•2.6 cups flour
•2 sticks butter (1 cup), softened
•3 tbsp black poppy seeds
•2 tbsp lemon juice
•1 tsp vanilla
•1 tsp lemon zest, optional
•3/4 cup sugar
•½ cup powder sugar for coating
Preparation
Preheat the oven to 325F.
In a large bowl, combine flour, butter, sugar, vanilla, lemon
juice, and lemon zest until
blended.
Divide the dough into 36 balls. Place balls on prepared baking
sheets, spacing 1” apart.
Bake 15 minutes or until tops are set and bottoms are lightly
browned. Cool cookies on the
rack for 15 minutes or so then carefully roll cookies in
confectioner’s sugar to coat.
