Lemon Bars

Ingredients
Crust
• 1 C all purpose flour
• ½ C butter, softened
• ¼ C sugar
Filling
• 5 Tbsp thick yogurt/sour cream
• 1 C sugar
• 2 Tbsp all purpose flour
• ½ Tsp baking powder
• 2 Tbsp fresh lemon juice
• 1 Tsp grated lemon peel
Preparation
1. For the crust: In a bowl, combine flour, butter and sugar
until well mixed.
Press into a lightly greased 8 x 8-inch square baking pan.
Bake in a
preheated oven at 350 F/180 C for 15-20 minutes.
2. For the filling: In an another mixing bowl, combine the
filling ingredients
and beat until frothy. Pour over the crust. Bake at 350 F/180
C for 20-25
minutes or until golden. Cool on wire rack and cut into
bars.
