Jeweled Cherry Nut

Ingredients
• ¾ C all purpose flour
• 1/3 C packed brown sugar
• 5 Tbsp cold butter
• ¾ Tsp egg replacer mixed with 1½ Tbsp warm water
• ¼ C cashew halves
• ¼ C almond slices
• ¾ C green and red candied cherries
• ¼ C vanilla chips
Preparation
1. In a bowl, combine flour and half of sugar. Cut in butter;
rub with fingertips
until the mixture resembles coarse crumbs. Press into a
lightly greased 8 x
8-inch square baking pan. Bake in a preheated oven at 350
F/180 C for 10
minutes.
2. In another mixing bowl, combine the egg replacer with warm
water until
smooth. Add the remaining sugar and mix well. Add the nuts,
cherries and
vanilla chips. Spoon evenly over the baked crust. Bake at 350
F/180 C for
20-25 minutes or until set. Cool on wire rack. When warm, cut
into bars.
