Cakes/Cookies

Ingredients
•2 to 2 ¼ cups flour
•1 cup butter, 2 sticks, softened
•1 ¼ cup powder sugar, divided
•1 tsp vanilla
•2/3 cup pistachio nuts, shelled, chopped
Preparation
In a large bowl, combine butter, vanilla, ¾ cup powder sugar,
and flour until blended. Fold
in nuts and mix well. Cover the bowl and refrigerate for a few
hours.
Preheat the oven to 350F. Shape dough into 1” balls. Place
balls on prepared baking
sheets, spacing 1 inch apart (make sure you do so because they
expand)!
Bake for 15 minutes and cool cookies on the rack for 5 minutes
until they are warm
enough to handle.
In a small bowl, add ½ cup powder sugar. Carefully roll
cookies in powder sugar to coat.

Dr. Lake, at the Florida State University. She is one of the
most knowledgeable teacher
educators/scholars in America but can be very moody just like
the summer weather in
Illinois….This is her favorite cookies and she calls them the
“wedding cakes” (coming
from Texas), though technically they should be called cookies!
I promise to make 300 of
these at her wedding reception and I have been waiting for
years to do so….
*In Greek Orthodox churches, they also offer this type of
cookies at the wedding
reception.
