Coconut Vanilla Chip
Cookies

Ingredients
• ½ C butter softened
• ½ C sugar
• 2 Tbsp yogurt
• ½ Tsp vanilla
• 1 C all purpose flour
• ½ C coconut powder
• ½ C quick cooking oats
• 1 Tsp baking powder
• ¼ Tsp baking soda
• ½ C vanilla chips
Preparation
1. Beat butter and sugar until fluffy. Add yogurt and vanilla.
Beat until thick. Add
flour, coconut, oats, baking powder and baking soda and
combine well. Add
the vanilla chips.
2. Divide the mixture into 24 equal parts. Roll each part to a
smooth ball and
slightly flatten them between your palms. Arrange on a greased
baking
sheet.
3. Bake the cookies in a preheated oven at 350 F/180 C for
10-15 minutes or
until golden. Remove and cool on wire racks.
