Carrot Pineapple

Ingredients
•All purpose flour..............................................1½ C
•Sugar...............................................................1 ½ C
•Ground cinnamon............................................½ Tsp
•Baking soda.....................................................¼ Tsp
•Salt..................................................................¼ Tsp
•Yogurt..............................................................3 Tbsp
•Melted butter...................................................¾ C
•Finely grated carrots.......................................1½ C
•Vanilla essence................................................1 Tsp
•Well drained crushed pineapple......................½ C
•Chopped nuts...................................................¼ C
Preparation
1) In a mixing bowl, combine flour, sugar, cinnamon, baking soda and
salt. Add yogurt, butter, carrots and vanilla. Beat until well combined.
Stir in the pineapple and nuts.
2) Pour into a greased and dusted 8-inch x 8-inch baking pan. Bake in
a preheated oven at 350 F/ 180 C for 1 hour or until a toothpick
inserted near the center comes out clean. Cool on wire racks. Cut into
pieces of desired size.
