Diana’s Butterquick Coffee
Cake

Ingredients
•2 cups flour
•1 cup sugar
•3 tbsp baking powder
•1 ½ tsp egg replacer, mixed with 2 tbsp warm water
•1 tsp salt
•1/3 cup soft butter
•1 cup milk
Topping:
•2 tbsp melted butter
•1/2 cup brown sugar
•1 tsp cinnamon
•½ cup chopped pecans
•2 tbsp flour
Preparation
Grease an 8” x 8” baking dish.
In a large bowl, sift 2 cups of flour and baking powder. Add
baking salt, butter, vanilla, egg replacer mixture, and milk. Beat
the batter for 2 minutes.
In a small bowl, mix brown sugar, cinnamon, nuts, flour, and
butter. Mix them well.
Pour half of the cake batter in the dish then pour half of the
topping. Now pour the rest of the cake batter and top the batter
with the rest of the topping.
***My American mother (Diana)’s coffee cake is a family
tradition that is served warm in the morning on Christmas day for
years.
