- Buttermilk Pound Cake

•1 ½ cup flour
•1/8 tsp baking soda
•¼ tsp salt
•1 ½ cup sugar
•3 tsp egg replacer, mixed with 4 tbsp warm water
•½ cup buttermilk
•½ cup butter
•1 tsp vanilla
•2 tbsp lemon juice
Preparation
Preheat oven to 325F. Grease one loaf pan.
Mix together the flour, baking soda, and salt. Set aside.
In a large bowl, beat butter with sugar. Mix in egg replacer
mixture and beat well. Stir in the
lemon juice and vanilla extract. Gently mix in flour mixture and
buttermilk. Pour batter into the
pan.
Bake for 50 to 55 minutes. Let cool in pan for 10 minutes then turn
out onto a wire rack and cool
completely.
