Apple Flavored Cake with
Lemon Sauce

Ingredients
•2 C all purpose flour
•½ C packed brown sugar
•1 Tsp baking powder
•¼ Tsp baking soda
•½ Tsp ground cinnamon
•¼ Tsp ground cloves
•¾ C yogurt
•1/3 C applesauce
•1/3 C apple juice
•2 Tbsp melted butter
•½ C raisins
Lemon Sauce
•½ C sugar
•2 Tsp cornstarch/cornflour
•1 C water
•1 Tsp butter
•2 Tsp grated lemon peel
•1 Tsp lemon juice
Preparation
1.In a large bowl, combine the flour, brown sugar, baking powder, baking soda, cinnamon and cloves.
2.In another bowl, combine the yogurt, applesauce, apple juice and butter; stir into dry ingredients until just moistened. Combine the raisins.
3.Pour into a 9-inch round baking pan. Bake in a preheated oven at 350 F/180 C for 50-60 minutes until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to a wire rack to cool completely.
4.For the lemon sauce: combine the sugar, cornstarch and water in a saucepan. Stir until smooth and bring it to boil. Cook for 2 minutes or until thickened. Remove from heat. Add butter, lemon peel and lemon juice. Combine well. Serve warm with the cake.
