Unniyappam

A favourite amongst kids, these ball-like round pancakes from Kerala in South India, are healthy and also very easy to make.  

Tastes awesome, with a hint of sweetness from jaggery

Ingredients:

• 2 cup of Rice flour (homemade rice flour)
• ½ cup of grated Coconut
• 1 cup of grated Jaggery
• ½ cup of pureed ripe Banana
• ¼ tsp. Cardamom powder
• 2 tsp. of black Sesame seeds
• Ghee for roasting

Method of Preparation:

1. Add ½ cup of water to the jaggery and make syrup by heating few minutes. Strain it.
2. Roast the coconut using little ghee.
3. Mix all the ingredients (rice flour, jaggery syrup, coconut, banana, cardamom powder, black sesame seeds).
4. Leave this batter for fermentation for about 3 hours. In hot places (or during summer) this fermentation happens much quicker.
5. Heat the pan, add ghee. Pour spoonful of the batter to each compartment and cook both sides until golden brown.

  it to Lord Krishna and honour it.

Preparation Time: 30 minutes

Soaking Time: 2 hours

Serving: 20 pieces
