Even assuming that all the cows that are being slaughtered are demons like Vatsasura. There is a chance that in future some innocent cow who is not a demon may get slaughtered.
The process of slaughter needs to be stopped because otherwise there is no end to it. I hope you understand this much.

khaali peeli kisi jeev ka hatya aise hi unplanned nahi hota hoga as per karma theory.
ya phir ye naya karma karte hai.. karma ka chakravuyh ko hum kaise jaan paaye ye toh bhagwan hi jaane.. kaun kya kaise karmon ka phal bhugat raha hai.
